Sweet Potato & Black Bean Kale Salad

This is a go-to lunch for my partner and I! It’s quick, nourishing, protein-packed, and leaves you satisfied- no bland salads here 😉

  • 2 cloves of garlic
  • Juice of 1 lime
  • 3/4 cup water
  • handful of cilantro
  • 1/2 an avocado
  • handful of cashews
  • 1/2 a jalepeno (or more depending on your spice tolerance)


  • Kale, washed & chopped
  • 1/2 can of black beans
  • 1/2 an avocado
  • handful of chopped cilantro
  • 1-2 sweet potatoes
  • paprika, salt, pepper


  1. Set your oven to 425 F. Chop up 1-2 sweet potatoes into small 1 inch cubes and place on a parchment-lined baking tray. Drizzle with a neutral oil, and toss with your favorite spices. (I use salt, pepper, paprika, and adobo). Place in the oven for about 30 minutes.
  2. For the dressing, blend together the above ingredients (avocado, garlic, lime, jalepeno, cilantro, cashews, and water) and set aside.
  3. To assemble the salad, start with kale, black beans, cilantro, sweet potatoes, and sliced avocado. Drizzle the dressing on top and combine. Enjoy!
