This is a go-to lunch for my partner and I! It’s quick, nourishing, protein-packed, and leaves you satisfied- no bland salads here 😉

Ingredients
Dressing
- 2 cloves of garlic
- Juice of 1 lime
- 3/4 cup water
- handful of cilantro
- 1/2 an avocado
- handful of cashews
- 1/2 a jalepeno (or more depending on your spice tolerance)
Salad
- Kale, washed & chopped
- 1/2 can of black beans
- 1/2 an avocado
- handful of chopped cilantro
- 1-2 sweet potatoes
- paprika, salt, pepper
Directions
- Set your oven to 425 F. Chop up 1-2 sweet potatoes into small 1 inch cubes and place on a parchment-lined baking tray. Drizzle with a neutral oil, and toss with your favorite spices. (I use salt, pepper, paprika, and adobo). Place in the oven for about 30 minutes.
- For the dressing, blend together the above ingredients (avocado, garlic, lime, jalepeno, cilantro, cashews, and water) and set aside.
- To assemble the salad, start with kale, black beans, cilantro, sweet potatoes, and sliced avocado. Drizzle the dressing on top and combine. Enjoy!
