You can easily have this salad every day of the week as a side to your dinner. Or make this a meal by adding a side of protein & carbs! It’s a recipe you will want to have on repeat.

Ingredients
- Arugula
- 1/4 cup pistachios (lightly chopped or left whole)
- 2-4 strawberries, chopped into bite size pieces
- 1/2 an avocado, chopped into bite size pieces
- 1 small shallot, finely diced
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp pomegranate molasses
- 1 tbsp white wine vinegar
- 1 tsp honey, or more to taste
- Juice of half a lemon
Directions
- Assemble your dressing by mixing the shallot, oil, salt, pepper, pomegranate molasses, vinegar, honey, and lemon together. Using an old sauce jar is a great way to mix dressings. Just shake it vigorously for 30 seconds and you will have a beautifully emulsified dressing.
- Generously toss your arugula in the dressing. Top with your pistachios, avocado and strawberries and dig in!
